The house

We built the least hotel we could, and then removed some more.

Sable House sits where the Ojai road turns to gravel: a 1930s ranch house, twelve rooms, one long table, and a bathhouse fed by mineral water. There is no lobby music, no check-in queue, no television. Guests arrive to a key on the counter and a note with the hour supper is served.

Everything here was chosen once and kept — the linen from a mill in Guimarães, the ceramics from a studio two valleys over, the cedar benches in the bathhouse built by the same hand that laid the terrace. What we offer, in the end, is very little. That is the point.

Accommodation

Twelve rooms, each with its own hour of light.

Room 03 — The Orchard Room

East-facing, opening onto the old olive terrace. Lime plaster, a deep soaking tub, and the first light of the valley at 6:15.

Room 07 — The Long Room

The largest of the twelve, with a sitting alcove, a writing desk in oak, and shutters that close out the afternoon entirely.

Room 11 — The Bathhouse Suite

A private door to the mineral baths, a fireplace laid each evening at six, and the only room with a view of the Topatopa ridge.

The terrace, November

Supper is served at one table, at one hour. Guests who prefer otherwise simply tell us, and a tray appears at their door — without ceremony.

The table

One menu, written each morning.

Our kitchen cooks what the valley gives that week — citrus and chicories in winter, stone fruit and tomatoes from July. There is no menu at the table, only a card on the counter at noon and a glass of something cold beside it.

The bathhouse

Mineral water, cedar, and silence after eight.

Three pools of varying heat, a steam room, and a cold plunge fed from the well. The bathhouse is open from six in the morning until late; after eight, conversation is left at the door by custom rather than by rule.

Reservations

Rooms are open through March.

Two-night minimum, adults only, twelve rooms in total. We take reservations by note or by telephone — the latter is answered by a person, usually within a minute.
